Country-Style Vegan Liverwurst

A veganized recipe for Liverwurst, that's a hearty and traditional German bread topping.

Ingredients

  • 150 g red kidney beans
  • 100 g smoked firm tofu
  • 1/2 onion chopped
  • 1 dry marjoram
  • 3/4 tsp sea salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp nutmeg
  • 3/4 tsp coconut blossom sugar
  • 1/4 tsp liquid smoke


Method

  1. Use a frying pan. Add the sunflower oil and fry the onion for 1 min. - add the marjoram and fry for another minute.
  2. Add the kidney beans and season with salt. Fry for further 2 minutes and set aside to cool down a bit.
  3. Cube the tofu and add to your food processor. Also add all the spices and liquid smoke. Process for a minute.
  4. Add the beans and a splash of sunflower oil. Process until roughly smooth.
  5. Reseason if necessary. - Chill for a couple of hours and enjoy on fresh baked bread of your choice.
